I love this recipe, tastes even better with chicken strips and cheese! Disclaimer that I am not a huge fan of pasta usually, but I like to experiment and make my own sauce. I’ve been trying to do that and so far, the results have been great! This is a creamy, but healthy option if you want to try making your own healthier and homemade sauce.
Ingredients: Avocado, Marinara sauce (toasted garlic & herbs), garlic, veggies, green chilies, cream cheese, salt, pepper, chili flakes (optional), veggies and pasta of your choice.
Tip: you can add more or less veggies in your pasta depending on preference. For me, I enjoy more veggies and not such a creamy sauce. That is why I added only one avocado in the sauce, if you want a bit more cream you can add 1/2 more avocados and also more cheese or milk/heavy cream. I chose to use spaghetti, but try this out with other types of pasta too. I recommend rigatoni or tortellini.
1. Boil your pasta and add some salt to help speed up the process on high heat. Also in a food blender, add one whole avocado, 2-3 scoops of marinara, one scoop of cream cheese, half a garlic clove, 1/4 chopped chillies, salt and pepper. (Mix in a blender until smooth (should look orange and blended well).
2. Add 1/2 chillies chopped and a garlic clove into a pan on high heat. Add veggies and sauté until reached desired look.
3. Add pasta with some pasta water into the pan of sautéd veggies. Finally, add in the sauce mixture made in the food processor into the pan and mix well with the content.
4. Add salt and pepper to taste, cheese (optional) or cooked meat of your choice! I like my pasta spicer, so I added chili flakes to my pasta as well. Enjoy
