Crispy Peanut Chicken Salad

This is so delicious and easy to make! Try it out, I made a spicy dressing to enhance the flavor and I recommend it if you like spicy food, if not, go easy on the siracha and chili flakes according to your taste.

I love this easy recipe for when you need to quickly whip up a side dish or appetizer for family or friends coming over. It’s really simple and all you have to do is throw all these ingredients into a fancy bowl. Don’t add the dressing until it’s time to serve. A tip is to add something crunchy like wonton strips. If you don’t have this, you can also use cooked tortillas. Cut these up into squares or triangles and throw it in the air fryer under 350 degrees for 10-15 mins (keep checking on them and shuffle around if it’s getting crispy brown). Once they are done, let it cool and crush them up into little bits. Add this into the bowl as garnishing with the dressing. This will add a crunchy texture to your salad. Ingredients:

1/2 red onion

1/4 lettuce head

Handful mini tomatoes

1/2 chopped celery stick

1/2 orange pepper

1/2 green pepper

1 jalapeño

1/2 cup boiled pasta

2 cups rotisserie shredded chicken

2 mini cucumbers

1/4 cup Raisins

1/4 cup crushed peanuts

Optional: cheese

Dressing: (crushed peanuts, 1 tbsp peanut butter, 1/4 cup ranch, 1 tbsp chili flakes, 1.5 tbsp siracha sauce, pinch of salt & pepper, 1 tbsp lemon juice)

Add all the chopped veggies and nuts into a bowl and mix. Add the boiled pasta & chicken. Mix well. Mix ingredients for the dressing & add it on top. Top it off with hot sauce and crushed tortilla chips, enjoy
