Mini Oreo Protein Cheesecakes

Do I even need to convince you to make these at home? These are the most spongiest & juicy cheesecakes I’ve ever made. It is so simple, all you do is blend a couple ingredients in the blender. The original recipe was a different, so I modified with my own ingredient substitution that I had at home. Still turned out absolutely delicious and its only 55-65 calories each. Let’s just jump right into the recipe!

Ingredients:

  • 1 muffin baking tray and muffin molds/cups
  • 150g plain non fat greek yogurt ( I used non fat vanilla)
  • 150g 2% cottage cheese
  • 1 egg
  • 30 g vanilla protein powder
  • 8g sugar free vanilla creamer powder
  • 5 g stevia
  • 3 crushed oreo thins
  • fat free whip cream optional

Alright lets get started..

  1. Take your blender and add in yogurt, cottage cheese, egg, protein powder, sugar free vanilla creamer and stevia.
  2. Blend the content until smooth. Add 3 crushed oreo thins and fold it into the mix.
  3. Pour this out into a muffin tray with baking cups evenly. Bake in the oven for 350 degrees for 25-30 mins.
  4. The tops of the muffin should turn a little brown. Keep checking the oven to monitor when that starts to happen.
  5. Remove from the oven and place in the fridge for atleast 1 hour (I kept it overnight).
  6. Your treats are ready, remove your healthy treats from the fridge and add some whip cream on to (fat free and optional). Sprinkle some crushed oreos and take a bite into these spongey & soft cheesecake!
