One of my favorite types of halwa is carrot flavored. This is a delicious Indian sweet dish that is served for so many different traditional occasions and celebrations. In honor of the festival of colors coming up, Holi, I decided to post a celebratory Indian sweet dish! Give it a try, let’s make it together because this was my first attempt too!
Ingredients:
- 20 mixed nuts crushed
- 6-7 cardamom pods crushed
- ghee 5-6 tbsp
- 4.5 cups carrot shredded/minced
- 4 cups milk (I used 2% milk)
- 10-12 tbsp sugar
- 10 raisins
1. Add one tbsp of ghee and roast all the chopped nuts. Set aside. Add the shredded carrots to the pan and roast for 2-3 mins. Add the milk right after into the pan.
2. Keep stirring the pan until the milk content is evaporated 75% (this may take some time) on MEDIUM heat. Add the cardamom pods crushed and raisins, most of the nuts (leave rest for garnishing).
3. Add the sugar and 4 tbsp of ghee into the pan. Mix really well and keep stirring so that the carrots do not burn on the bottom of the pan.
4. Once most of the milk is evaporated, add into a bowl and garnish with remaining nuts. Serve hot or cold and enjoy!
This may not be the most healthy dish ever, but hey everyone needs a cheat day right? Also, Gajar Ka Halva is an excellent sources of Vitamin A, C and K. In addition to that it also contains healthy fats and is also a rich source of fibre and antioxidants.
Although you can make this whenever you want, here is some context on when people usually serve this. Halva has long been associated with commemorative occasions, both happy and sorrowful, and this tradition still remains strong in many middle east/south east cultures. It is served wherever people gather to recognize births, traditional ceremonies/festivals, weddings, and to mourn deaths.
