Missing panda express? Tired of making elaborate marinades? Try this simple recipe, it’s not quite Panda Express, but it’s a homemade version that is probably healthier. The noodles are optional, you can substitute for a healthier option like brown or white rice.
What do we need for the chicken?
- 1 chicken breast diced ( small cubes)
- 2 tbsp of pepper
- 1 tbsp of salt
- Sesame seeds
- 1 tbsp sesame oil
- 1 tbsp lemon juice
Add this to a bowl and let it sit for at least 30 mins.
This is what we need for the dish:
- 1 cup chopped celery
- 1/4 cup green onions and cilantro
- 2 tbsp soy sauce
Heat your pan with 2 tbsp of oil and add the celery, green onions and cilantro to the pot. Add some salt and pepper. Wait for the content to brown and add soy sauce next. After 5 mins add in the chicken marinade and reduce heat to medium. Let the chicken throughly cook.
Once the chicken is cooked, you’re ready to eat this with a side of veggies, white rice or noodles. I made spicy noodles for myself with ramen and extra soy sauce, vinegar and chili oil. Add and garnish to a plate, enjoy your home cooked meal!
Here is a tip: Have left overs? No problem, add the chicken and noodles to a rice paper roll and add siracha mayo as well as thinly slices carrots or lettuce. Wrap it up and dip it in some peanut sauce or any soy sauce, enjoy! I like to pan fry my rice roll wrap since the texture gets crispier. Either option tastes good, try them both!
