Spicy Chicken Rolls & Tzatziki Sauce

Make this sauce at home, it is simple and you probably already have the ingredients at home!

Spicy chicken rolls are always my go to when I want something healthy to eat. It tastes even better when you pair it with a different type of sauce. I found that Tzatziki sauce in these wraps/rolls compliment the chicken really well. I find chicken on the drier side and would recommend adding a sauce to make sure that the rolls are juicy and flavorful. The sauce was my first attempt, so keep reading for the recipe on how to make this and pair it with this meal.

Spicy Chicken RollsTzatziki Sauce
2 chicken breast
1 cup plain yogurt
1 tbsp Sriracha sauce
1 tbsp Maggie Sauce
1 tsp salt & pepper
2 chilies
3 garlic cloves
1 tbsp meat masala
2 tbsp chicken tikka masala
1 red onion
2 green peppers
1 tsp mustard seeds
1 tsp cumin seeds
2-3 tbsp canola oil
1/4 lettuce head (thinly sliced)
9-10 cooked tortillas
1 cup yogurt
1 tbsp dill
1 tsp parsley
2 tbsp lemon juice
1 tbsp lemon zest
2 cloves garlic (minced)
Pinch of salt & pepper
1/4-1/2 cucumber minced or shredded
Tips: Don’t stress about the type of masala packet you use, the flavor might be a little different but not a deal breaker for this recipe.

Now that we have all our ingredients, let’s begin!

  1. For the chicken marinade, add your chicken breast (diced cubes) into a bowl and add the yogurt, siracha sauce, maggie sauce, salt, pepper, chilies (sliced or chopped), garlic cloves (minced), meat masala and chicken tikka masala together. Mix this well and set aside for atleast 30 mins, but for best results you can marinate overnight too.
  2. In a large pot, add the oil, cumin, chilies, garlic, onion, & mustard seeds. After 3-4 mins of high heat, add in the diced green peppers, salt and pepper. Roast this until onions are translucent and the mixture is toasty (don’t let the chilies & garlic burn). 
  3. Add the chicken marinade into the pot and stir well. Reduce head to medium and let the chicken cook. Make sure that you are stirring every now and then, so that the chicken doesn’t burn. Add in some more salt and chicken tikka masala content (according to taste) if needed. Adding one tbsp of butter is optional to enhance the flavor.
    • Tip: while cooking the chicken, it might leave water in the pot which takes time to soak up in the pot from the heat. You can add 1 tbsp of corn starch to 1/4 cup of water max and stir this. Pour it into the pot so that the chicken ‘curry’ thickens up faster. 
  4. When the chicken if fully cooked (take 1-2 pieces out and cut it to check that it’s fully cooked) set aside and add 1/4 cup green onion and 1/4 cup cilantro (this is optional). 
  5. Set the pot aside and warm up some tortillas. I used the frozen Costco tortilla pack (about 8-9 cooked tortillas total). Make sure that your lettuce is finely cut in strips and the sauce is ready (see below for steps on how to make this). 
  6. Lay your tortilla on a plate, add the spicy chicken from the pot, add some lettuce and spread the Tzatziki sauce on 1/2 of the tortilla. Add cheese on top (optional) and roll it up! Keep repeating this step for the rest of the tortillas.
    • Tip: if you want this to be more filling, add your choice of cooked rice in each roll. This will help you make more rolls which can be helpful for feeding more mouths, meal prepping or freezing for later! 

Tzatziki Sauce 

  1. Take a medium sized bowl and add yogurt, dill, parsley, lemon juice, lemon zest, garlic (minced), salt, pepper and the shredded cucumber. 
  2. Mix this well and add 1 tsp of garlic oil (optional) to the bowl. 
  3. Set aside to add on to the Spicy chicken rolls. 

This was a super simple attempt on making this sauce and it is my first time. I realized that this sauce is great to make for bigger batches. It’s a great dipping sauce for spring rolls, celery, carrots, nuggets, chips, toast, or anything that needs a spread. Great for sandwiches, salads, wraps or burritos too.
