Vegan Chocolate Chip Cookies

Chocolate chip cookies are a classic baking essential. If you have a sweet tooth, I’m sure that you’ve baked some at home before! Keep reading to unpack another recipe that is vegan and easy to make. They’re not your traditional chocolate chip cookies, but you can easily find these ingredients at home. Most importantly, these are super healthy and guess what they’re made of? Chickpeas! I know, sounds crazy, but it’s possible. This is a great healthy alternative and easy to bake. Another great thing about this recipe is that the batter is edible. If you want an edible cookie dough, look no further because you don’t need to bake these to enjoy these goodies!

All of these things are easy to find and you might already have them.

Ingredients:

  • 1 can chickpea
  • 1/2 cup peanut butter
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract
  • 1/3 cup chocolate chips

Grab a mixing bowl and spoon, lets start!

  1. First, make sure that your oven is baking under 350 degrees.
  2. Take your chickpeas, vanilla extract and blend it into a food processor until it’s smooth. You can splash in some water if it’s too thick.
  3. Once that is smoothed out, add in the maple syrup along with the peanut butter. Blend this for a while (the consistency might be a little thick and that’s okay).
  4. Pour out the content into a mixing bowl and make sure that everything is folded into the batter.
  5. Now you can add your chocolate chips and make sure that it is fully incorporated into the mix. (If you just wanted an edible cookie dough, you can stop here)
  6. Take a spoon and carefully place a small amount of cookie dough onto a cookie tray (already sprayed with oil). Look at the picture up top, to see what that should look like.
  7. Place in the oven for 30-35 mins and keep checking. When the top looks crispy and brown/hardened, you can let it cool in your kitchen.
  8. Once cooled, you’ll notice the cookies are delicate but that is normal. Store them in a box and enjoy your healthy sweet treat!

I added 1/2 of a teaspoon of baking powder which helps, only add this if you’re baking cookies. I also would suggest adding more maple syrup because it’s not on the sweeter side. Originally, I added only 1/4 cup of chocolate chips. I wrote here 1/3 because I think more chocolate chips would help with the sweetness. Next time I will add some flour to the dough and see if that helps bake the cookies better so stay tuned!
