Chipotle Pepper Shrimp Tacos

Get ready to make this easy, delicious and healthy recipe with me. I usually don’t expand from chicken, but adding shrimp to my diet has been really good with my workout plan. There is no fishy smell and it tastes so good! This is a spicy, sautéd & flavorful blend that is easy to put together. Check out what you’ll need and lets get started!

Ingredients:

  • 1/2 bag of extra small frozen shrimp (can be any size)
  • 2-3 tbsp of chipotle pepper seasoning
  • 2 tbsp of lemon juice
  • 1/2 onion
  • 1/2 tomato diced
  • 1/4 cup cilantro
  • pinch of salt
  • pinch of pepper
  • 1/4 cup of green onions
  • 1 tbsp of sweet & spicy chili sauce (maple syrup for substitution)
  • 1/3 cup shredded cheese
  • 2-3 tbsp of siracha mayo
  • 1 avocado
  • 1 chili
  • 3 mini bell peppers
  • 1 garlic clove
  • 1 tbsp ginger
  • 4 cooked tortillas
  • 1/4 cup cabbage

First of all, make sure you let the shrimp marinate for up to 30 mins. Go ahead and add your shrimp to a bowl as shown above. Inside the bowl, you want to add lemon juice, ginger, garlic, salt, pepper, chipotle pepper seasoning, green onions, sweet & spicy chili sauce (or maple syrup). Great, now let’s leave this aside and prepare our salsa.

Grab another bowl and add your onion, tomato, a pinch of lemon pepper or juice, salt and pepper (just a pinch), cilantro, 1/4 diced onion and chili. Set this aside, now let’s cut up our veggies!

Thinly slice your mini peppers, cabbage and 1/4 remaining onion. On the side, make sure you have your avocado thinly sliced, diced or in guacamole form (whatever you prefer).

  1. In a warm pot with hot oil, add in all the veggies that you just sliced. Add a pinch of the chipotle pepper seasoning and let this sauté until it turns a little brown (add a pinch of salt and pepper to speed up the process).
  2. Now take the shrimp marinade that is collected in the bottom of the bowl. Pour that liquid (if any, this is an optional step) into the pan as well.
  3. Add in the shrimp to the pan after a few mins and cook well until it is a little browned. Keep stirring to avoid any burns.

Don’t worry, we’re almost done here. Now we just have to prepare the tacos!

Take your tacos and place them on a plate.

Add a reasonable amount of siracha mayo to the center of the tacos.

Top it off with avocado, shredded cheese and salsa.

Now, add in your veggies + shrimp from the pan and you’re ready to serve!

Pro tip: Please add lettuce and sour cream, I didn’t have any at the time, but I do recommend it. Corn is also a great addition for texture.
