This bread is so delicious and fluffy! Not very dry and one of the best banana breads I’ve had, another plus is that it has a lot of protein in it. Enjoy this as a snack or with your coffee/ tea in the morning. The one thing I would change is adding less sugar, there is 30g of sugar free sugar. I would opt for 20-25g instead for a less sweet option, unless you enjoy a sweeter bread.
Ingredients:
- 2 bananas
- 3 eggs
- 80ml milk
- 90g yogurt non fat plain
- 1 big tbsp of peanut butter
- 30g sugar free sweetener
- 60g protein powder (vanilla)
- 80g oatmeal
Take a food processor and add all these ingredients. After blending the content, pour this out into a bread pan (any steal pan works). Make sure that the pan is already sprayed with oil before pouring the batter. Bake in the oven for 350 degrees for 50 mins (keep checking to make sure it’s only slightly moist on the inside as it should be). You can take the baked bread out and slice it up.
